THE owner of a village deli is selling so many Scotch eggs she has to close one day a week to replenish the stock.

Sara Carless has this week sold her 5,000th Scotch egg at Sara's Kitchen, in Trull.

She only launched the deli in February and since then the Scotch egg has proved a massive his with customers.

Selling around 600 a month, her produce has seen unprecedented demand and has sparked the attention of other regional businesses requesting her products for resale.

Sara said: "A deli has been located on the same site for several years and it's always been an asset to the village with lots of passing traffic, but I never thought Scotch Eggs would be so popular.

"It just goes to show you that, like the humble sausage roll, people like tradition."

The Scotch eggs are so popular she has to close on Monday's to make even more.

There are more than 20 different flavours, but the best-selling ones are traditional, chorizo chilli and cheese, smoked ham hock and piccalilli, and black pudding apple and cheddar.

To meet demand, Sara has recently purchased a horse box which she plans to transform into a kitchen, taking her tasty treats of pasties, pastries, cakes and pies on the road.

She added: "The local community have been incredibly supportive of the business and, with the passing trade, I guess word has got around that we offer something familiarly tasty but with a bit of a twist.

"I'm looking forward to taking my Scotch eggs to other communities, but Trull will always be my starting point for new taste creations.

"The village knows what it likes and people are always making suggestions. It's great to have that feedback."
